I think I found it: File>Properties>Units/Tolerances>Solid Faceting?
Oddly if I try to set this to "Specify solid face facting quality" the setting won't stick, it always reverts to "Coarse". I CAN check the "Specify solid face faceting parameters" and change the number and the setting sticks but what does this do that's different from the aforementioned setting?

Is there something that would cause that setting to revert back to "Coarse"? Each time I change it to Fine and hit "Ok" it reverts back to Coarse.
I am able to check the "Specify solid face faceting parameters" and change the number there and it will remain set but the slider always reverts back to Coarse. I did save a template with the faceting parameters specified so I guess that will work for what I want.
